In my family, it was first made by her, then by my mother, now by me, and mainly for my dad, who's been eating it at Christmas for pretty well all of his life. It requires a truck load of dried fruit, soaking it liberally in booze, and a sleep after eating a slice. Sometimes, in seasons other than summer, I have a craving for fruitcake but just thinking about what making it entails - a trip to the supermarket, an overnight soaking of fruit, an enormous cake that takes weeks to get through - is enough to quell that desire... or at least it was until I came across this recipe in the newspaper last weekend.

Moroccan-spiced tea loaf

My grandmother's fruit cake
December and January are - in Australia anyway - associated with one cake. Though it's often called Christmas cake, fruit cake straddles the summer. For me it's evocative of catching up with rellies in between present shopping and menu planning in the lead up to the 25th, and of morning teas in rest areas on road trips in the new year. It goes as well with bone china, as it does with tea from a thermos. My grandmother Irene, who I've talked about here before, many times, was famous for her fruitcake. When she died, my mother took up the tradition, and now, this year, it falls to me. In mum's cooking files, I found my grandmother's original handwritten recipe. Curiously, it listed only the ingredients, and no mention of method, but after a little internet research I was able to take a stab at how they combined. The key point of difference in any fruit cake, it seems, is whether or not the fruit is boiled. From what I gather, the boiling is a shortcut to allow you to make the cake the day you want to eat it, speeding the softening of the dried fruit. My grandmother did not believe in short cuts, so I elected to take the long road and soak the fruit the night before. Really, this took no time at all and required nothing more than a bit of measuring out. The next day, it was just a matter of combining the plumped, boozy fruit with the remaining ingredients to form a rich, robust batter, pouring it into a tin and baking it for three hours in a slow (low) oven. Though I didn't have either of my senior fruit cake advisers on hand, I did have the help of my dad's 16 year old neighbour William, a keen baker with 2nd and 3rd place wins in the fruit cake division of the Brookfield Show behind him. On the lookout for a prospective 1st place recipe, he offered his services and I gratefully accepted. I'm pleased to report it was a win for both of us, the cake pulled from the oven as good as I remembered my grandmother's and my mother's: deep brown, moist, and fragrant with citrus, dried fruit and the memory of those who'd made it before me.

Granola bars
On Tuesday I travelled to Newcastle, a port town 160km or so north of Sydney. My train left at 7.15am. The friend I was meeting was making me breakfast on arrival at 10am. I didn't want to set the alarm so early to make myself a pre-breakfast breakfast. I didn't want to spoil my actual breakfast with some overpriced, underbaked muffin from Central Station. So I packed a granola bar, for a snack as good as the view.
Sure, I could have bought one, but making them (the day before) had the advantage of using up all the bits and pieces of dried fruit and nuts I had in my pantry. Plus, these taste way better than any that come out of a box. You might say, on reading the recipe, that that's because of the butter and sugar involved, to which I'd say - wouldn't you rather know what you were eating rather than puzzle over some indecipherable chemical on the side of a packet? You might say, don't those mystery ingredients make them last longer? But I'd say the homemade sort freeze beautifully and defrost quickly. Not that you should rush to that storage solution - if you're a regular snacker, these will last at least a week in an airtight container out of the fridge. Provided you don't eat them all at once, as you may well be tempted to do.
You can use whatever combination of fruit and nuts you like. In this batch I tumbled in almonds, pepitas, dried apricots, dates, shredded coconut and raisins. The chunkier ingredients I chopped roughly. Feel free to improvise any way you like. Swap fruit for dark chocolate or cacao nibs, nuts for chia or sesame seeds. Put in peanut/almond butter or leave it out. It's entirely up to you. And that's the best reason of all to give them a go.

Rugelach
Every week when I come to write my post I feel like I'm repeating myself. Inevitably at some point I'll have to go back to check if I've used the phrase "these come together in no time" or "this takes no time to prepare" too recently. This week is different. This cookie - while certainly not difficult in any way - is a little bit more complicated than the usual mix-a-batter-and-drop-by-spoonfuls-onto-the-baking-sheet type of affair. There's more of a process involved. But I'm here to tell you it's totally worth it. I had rugelach for the first time at Zabar's (which for my money is every bit as good as any museum by way of cultural experience) in New York, when I was looking for something small and sweet to accompany my mid-morning coffee. I probably didn't know how to pronounce it (and still kind of don't) but just pointed dumbly at one of the little rolled cookies in the display case. Biting into it, I tasted fruit and nuts and jam and some sort of tang in the crumb that beautifully cut through the intense sweetness. It was chewy and sticky and, in its elegant swirl, a thing of great beauty. I was so absorbed in my enjoyment of it all that I almost missed seeing Bill Cunningham (the eternally youthful, 80-something fashion photographer for The New York Times and subject of a great documentary) ride by on his bike. I was not photo-worthy but had he seen the rugelach, he surely would have stopped. But it was too late. I'd eaten it all.

Conchiglie with saffron, capers and raisins
There are a million reasons not to invite people over for dinner. Your apartment is too small. You don't have enough time. Or nice enough plates. Money for fancy ingredients. Mastery of complex cooking techniques. It doesn't help that the top-rated shows on television at the moment are ones featuring so-called "home cooks" poaching salmon in temperature-controlled olive oil baths, or constructing edible towers strewn with micro-herbs or native berries. If that's your idea of a good time, then great. For me, having people over is about being together, and it should be easy and fun, generous and relaxed. I love to cook but I want to spend time with my guests, not be stuck in the kitchen all night, then into the early hours of the morning with the washing up.
So on Saturday I had some friends over. One of them was a vegetarian. I made pasta. Most of the ingredients I already had on hand (except celery, which I purchased for the grand total of 69 cents), which is the beauty of this particular dish by Israeli-born, London-based chef Yotam Ottolenghi. It's as if he'd came up with it by pulling random grocery items from his fridge and cupboards and throwing them all together. It's a crazy combination of flavours and textures but it works - salty, sweet, crunchy, soft, strident, subtle... It takes no time to make, tastes good hot or cold (one of my favourite parts of having people over are the leftovers the next day) and makes everyone happy. Even those who hate raisins... of my four guests, there were two of these, who both enthusiastically dug in for seconds.
