Pear tart
By and large I cannot be bothered with pastry. It's all to do with the rolling out really. The flour that goes everywhere. The dough that does not spread in a perfect circle, or any sort of circle at all. So I was excited to come across this recipe for a tart in which the pastry is just pressed with your fingers into the tin, baked for a bit, then packed with pear slices and a filling of butter, sugar and eggs that transforms in the oven into a silky, sweet custard. In many ways it's like the winter equivalent of Nora Ephron's peach pie - easy to make, even easier to eat. I took a couple of slices on a walk last weekend with my cousin, where they were enjoyed with a view of the harbour... as well as by the kookaburra who swooped and snaffled the last bite.

Spiced pear paste
December was destined to be a downer due to a deadline. So to counter the crankiness of working while everyone else was on holidays, I made a pact with myself that I would see or swim in the sea every day of that month. I'm lucky enough to live within walking distance of three stunning Sydney beaches, and multiple ocean pools. Last year I didn't go once to any of them all summer. My mum had just died and I found it hard to be around beauty like that at a time when things felt so dark. A year on, it felt like the policy needed to change. I'm not sure I felt any more festive but it definitely felt good to be floating, if only for five minutes a day.
Mum used to make guava paste, which I loved, but I didn't have guavas, so with a bit of inspiration from Maggie Beer's peerless products, whipped up a spiced pear paste, which was wonderful. Here's to horizons.

Pear and hazelnut cake
On Friday night I flew down to spend the weekend in Anglesea with two friends I've known now for nearly twenty years. There was porridge (with apples, roast almonds and homemade dulche de leche). There were pies (from the local bakery). There were walks on the beach. There were dogs. There were antihistamines (I'm allergic). And, of course, there was cake. I'd spotted this Frank Camorra recipe in the Sydney Morning Herald a few weeks ago and ripped it out thinking it would be the one for this weekend: a sturdy shape (handy for carry-on), seasonal (autumn pears), and nuts and dark chocolate for post-surf (or post-surf watching) indulgence.
I love the beach in winter. Or, better still, almost winter, when it's still pleasantly walkable but free of beach umbrellas and flying frisbees, when you can see for miles and it's moody and misty and the surfers in their wetsuits bob black like seals in the water - my friend Gill among them! - waiting for a wave. And we were waiting for her when she came in. With cake. Like Gill, it's worthy of applause. The pears are silky, the ground nuts buttery-smooth and the chocolate chunks a sweet surprise crunch. And it's made with brown sugar, which lends a deep caramel to the colour and flavour of the loaf. Not to mention a lovely (almost) winter warmth.
